I gratified my hankering for a home-cooked cross between greasy diner and greasy food truck this evening with gooey cheese and thick, smoky bacon and a thin patty of perfectly seasoned ground chuck smashed between two slices of buttery, grilled bread, topped with a runny egg.
I did discover a few helpful tidbits along the way:
1. Technically, this dish shouldn’t take too long to prepare, unless your bacon disappears as quickly as you cook it. Maybe eat a snack before you start frying up all that bacon or prep could take twice as long.
2. Snack Idea: If you’ve never taken a slice of quality bacon, topped it with a thin slice of cheese, topped it with a jalapeno and popped it in your mouth…you. have. not. lived.
3. Jalapenos added in between the bacon and beef patty are a nice addition, if you’re into spicing it up a little.
4. Runny yolk. ‘Nuf said.
Not exactly a recipe, but here’s what a did.
A good basic patty melt recipe can be found here at Chow.com. Onions are optional. I’ve made them with and without. I was in a rush today, so sans onions.
1. Prepare patties as desired. I patted mine out pretty thin and added them to a pan of olive oil with a little butter. Sprinkled kosher salt and freshly ground black pepper and let ‘em go until cooked thoroughly (turning once).
2. Wrap patties in foil and stick in a warming oven.
3. Cook bacon (I used the same pan).
4. Thinly slice cheese of your choice. I’ve used swiss and cheddar. Today, I chose 2% Velveeta (when you’re working with so much butter and grease, that lower fat content in your cheese will totally save the day. haha)
5. Prepare griddle pan with butter and melt. Lay two pieces of bread on the butter. Add desired amount of cheese to each slice. Add beef patty, top with jalapenos, mushrooms or onions (or other yummies, if desired) and top with bacon.
6. Make a sandwich.
7. Turn the heat down some and slightly smash the two pieces of bread together with a spatula as the cheese melts. When cheese is melted and sandwich is heated through, remove from skillet and enjoy!
