My non-extensive search for a perfectly moist and delicious banana bread is over! Not that I’ve been desperate. Truthfully, bananas aren’t on my list of favorites and banana bread isn’t at the top of my list either, but a few too many ripe bananas led me to this recipe from My Baking Addiction. She says it’s The Best Banana Bread Recipe, and it really is the best I’ve ever eaten! It’s moist. Not too sweet. Cinnamony. And it’s topped with one of my favorites – a brown sugar streusel. I lacked the Penzey’s Cake Spice she referred to in her recipe and substituted cinnamon as directed. I stirred 1/2 c. walnuts to the batter at the end of prep. but it would be just as delicious without nuts. I also baked mine for exactly 60-minutes and it was perfect!
The Best Banana Bread Recipe

Preheat oven to 350-degrees and grease a 9×5 inch loaf pan.
Whisk dry ingredients together in a large bowl:
2 c. AP flour
1 t. baking soda
1/4 t. salt
1 t. Penzey’s Cake Spice or cinnamon
Now, in a large bowl mix on medium speed with a hand mixer:
1 stick butter, softened
3/4 c. packed brown sugar
Beat together until smooth and creamy, about three minutes
Then stir into the sugar and butter mixture:
2 eggs, lightly beaten
2 teaspoons pure vanilla extract
2 1/3 c. mashed ripe bananas (I used 5)
Now, carefully stir the wet ingredients into the dry ingredients. I added my walnuts at this point. Stir until just combined and pour into prepared loaf pan.
Streusel Topping:
1/4 c. AP flour
1/4 packed brown sugar
1/2 t, Penzy’s Cake Spice or cinnamon
Pinch of salt
2 T. chilled butter, cut into cubes
I whisked the dry ingredients together, then added the butter. Work the butter in with your hands until it breaks into smaller pieces.
Sprinkle the streusel over the batter and bake for 60-65 minutes or until done (toothpick comes out clean). Cool for ten minutes in the pan and then place on a wire rack to cool. Be careful when removing the loaf so your streusel stays intact!
