Friday evening before the holiday weekend, I sat down at the picnic table with a few old magazines, on a quest for new recipes. Years ago, magazine collecting was a hobby of mine and I’d forgotten the tranquility of sipping a cool drink while flipping through glossy pages full of vibrant photographs. Read what you want. Discard the rest. Move on to the next one! As soon as I saw this recipe for Mini Catfish Cakes, I knew it would likely be a hit at our house, and I wasn’t wrong! Since this was my first time to make them, I stuck pretty close to the recipe although I added a good pinch of kosher salt instead of table salt. Next time, I will likely add some Cajun seasoning or at least some cayenne to spice ‘em up a bit.
We dipped ours in chipotle tartar sauce which I sort of whipped up on a whim and didn’t write down the measurements, but you could use this recipe for homemade tartar sauce as a guide and add a little chipotle pepper or adobo sauce to it, if desired. I will tell you that I used lime juice in my tartar sauce instead of lemon juice. Enjoy!
Mini Catfish Cakes
from Southern Living
1 lb. catfish fillets
1 1/4 c. Panko breadcrumbs
3 green onions, minced
2 large eggs, beaten
1/2 c. finely chopped red bell pepper
1/2 t. salt
1/4 t. fresh black pepper
1/4 c. vegetable oil
Chop catfish (I rinsed and dried mine first) into 1/4-inch pieces. Combine catfish, 3/4 c. breadcrumbs and next 5 ingredients; gently stir until well blended. Shape mixture into 12 patties (about 1/4 c. each). Dredge patties in remaining 1/2 c. breadcrumbs.
Cook patties, in batches, in hot oil in a large skillet over medium heat, 3-4 minutes on each side or until golden; drain on paper towels.
And now a few new pics from the yard and area surrounding it. When I first started taking photos, strolling for ‘new ‘ subjects I hadn’t captured before became a regular occurrence. I don’t stroll my yard with the camera nearly as often as I used to, but when I do, I always find something in my own space I enjoy and am reminded you don’t always have to go far to find a treasure.
